Jelly Bean Brittle

  • 11 ounces of Jelly Beans, (sort out any flavors you don’t like)

  • 1 Cup White Sugar

  • 1/2 Cup Corn Syrup

  • 1/4 L. Cup Water

  • 2 Tablespoons of Butter

  • 1 Teaspoon Baking Soda

  • 1/4 teaspoon Salt

  1. Cover a baking sheet with parchment paper. Coat the parchment paper with non-stick cooking spray.

  2. Place the jelly beans on the parchment paper, making sure that the jelly beans are evenly distributed across the baking sheet.

  3. In a large saucepan, combine the sugar, corn syrup, salt, and water. Bring the mixture to a boil, and stir until the sugar is dissolved.

  4. Using a candy thermometer to monitor temperature, stir the mixture frequently until the temperature reaches “Hard Crack” stage or 300 degrees Fahrenheit (150 degrees C).

  5. Once the mixture reaches temperature, remove the saucepan from heat and quickly stir in the butter and baking soda.

  6. Once the butter and baking soda are incorporated, carefully pour the mixture over the jelly beans on the baking sheet. Do your best to cover all of the jelly beans.

  7. Allow the candy to cool completely.

  8. Remove the candy from the baking sheet and parchment paper. Break into pieces and enjoy!
